The number to remember is 28.35
One avoirdupois ounce is 28.349523125 grams. Rounding it to 28.35 is safe for anything you will cook or post; rounding it to 28 introduces a 1.23% error, which is a whole gram by the time you reach 3 oz and five grams by the time you reach a pound.
The exactness comes from the pound: 0.45359237 kg by definition, divided by sixteen. Every figure on this page inherits that, so extra decimal places are real digits rather than noise.
The quarter-pound ladder
| Ounces | Grams | Also known as |
|---|---|---|
| 1 | 28.35 | A nutrition-label portion of cheese or nuts |
| 2 | 56.70 | An eighth of a pound |
| 4 | 113.40 | A quarter pound; one US stick of butter |
| 8 | 226.80 | Half a pound |
| 12 | 340.19 | Three quarters of a pound; a standard US can |
| 16 | 453.59 | One pound |
| 32 | 907.18 | Two pounds |
Fractions are the normal input
Older British recipes deal in halves and quarters of an ounce, and jewellery and spice work in
eighths. Type 1/2, 3/4, 1 1/2 or 2¼
and all of them are parsed directly, so you never have to turn the fraction into a decimal
first.
Ounces of liquid do not convert here
If your recipe says "8 oz of milk", it almost certainly means eight fluid ounces — a volume — and this page will give you the wrong answer. Eight US fluid ounces of milk is 237 mL, which weighs about 244 g, not the 227 g you get by treating it as weight. The general rule: in US recipes liquids are fluid ounces and solids are weight ounces; in British and professional recipes almost everything is weight.
Troy ounces for metals
Gold, silver, platinum and palladium are priced per troy ounce, which is 31.1034768 g. A one troy ounce bar is about 10% heavier than a one avoirdupois ounce piece of anything else, and using the wrong figure moves a bullion valuation by roughly a tenth. Twelve troy ounces make a troy pound (373.24 g), not sixteen.
Grams are simply better for cooking
A gram is small enough that you rarely need a fraction, which removes an entire class of error. Once a recipe is converted, write the gram figures on the page and stop converting — each round trip through a rounded ounce figure loses a little more precision.
Questions
How many grams is 1 oz?
28.349523125 g. Rounding to 28.35 g is safe for cooking; rounding to 28 g introduces a 1.2% error, which shows up over a kilogram.
What is 8 oz in grams?
226.8 g — half a pound. A full 16 oz pound is 453.59 g, which is why "a pound of butter" and "450 g of butter" are near enough the same block.
How do I convert ounces of liquid?
You cannot, without knowing what the liquid is. A US fluid ounce is 29.5735 mL of volume; converting it to grams needs the density. Use the ounces-to-cups tool, which handles both readings side by side.
Which ounce do gold prices use?
The troy ounce, 31.1034768 g — about 10% heavier than the avoirdupois ounce on this page. Never mix them.
